Korean beef mince bowl - Eat Well Recipe

This Korean beef bowl is actually a "cheater" recipe; a twist on a Korean dish called bulgogi. Bulgogi is traditionally made with marinated seared steak. This beef mince version is much faster, extremely delicious, and very inexpensive to make!

Ingredients

⅓ cupBrown sugar
¼ cupSoy sauce
1 TbspSesame oil
1 tspChilli flakes
½ tspCrushed ginger
1 TbspVegetable oil
450 gBeef mince (Main)
2Spring onions
1 handfulChopped fresh coriander
1 TbspChilli flakes
1 TbspToasted sesame seeds
1 cupCooked rice (Main)

Directions

  1. In a bowl, whisk together brown sugar, soy sauce, sesame oil, chilli flakes and ginger. Chop spring onion, reserve chopped green ends for garnish.
  2. Heat vegetable oil in a pan over medium high heat. Add beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Stir in soy sauce mixture and spring onion until well combined, allowing to simmer until heated through, about 2 minutes.
  3. Serve immediately over cooked rice and garnish with green spring onion ends, coriander chilli flakes and sesame seeds.
